BACON WRAPPED FILET MIGNON BITES

A crowd favorite of tender filet bites wrapped in crispy bacon and served with horseradish sauce




For seven consecutive years now, a group of friends would get together the night before Thanksgiving for Friendsgiving. I came in around year 4 and quickly fell in love with the tradition. Because of logistics I've hosted the event for a few years now and plan a menu theme that's not traditional Thanksgiving fare because for some reason I cannot fathom, this group prefers not to have it 2+ days in a row. Call me crazy, but I could eat mashed potatoes, stuffing and pumpkin pie for a whole week (and by that I mean month)! Anyway, I was gearing up to host one year and sent out our menu. The previous year I had made rack of lamb and wild mushroom risotto -- pretty hard to top, right? Well this year the plan was an Italian theme and I volunteered to make stuffed shells, eggplant parmesan, and Italian sausage. I cannot begin to describe the level of disappointment. "You went from rack of lamb to eggplant?!? Whaaaaaaat?" To attempt to make up for this grave misstep I made two trays of bacon-wrapped filet mignon bites with a creamy horseradish sauce as an appetizer. Crisis officially averted! This is also something you can do in small quantities if you opt to stay in on a special occasion and make something special.

Ingredients:

  • 1 lb Grass Fed Organic Beef Tenderloin (cut into 1 inch bites)

  • ½ lb Organic Uncured Bacon (cut in half)

  • Himalayan Salt & Fresh Ground Pepper

  • Skewers (soaked in water for 15 min)

  • ¼ cup Prepared Horseradish

  • ¼ cup Sour Cream

  • ¼ cup Mayonnaise

  • 1 tbsp Fresh Squeezed Lemon Juice

  • 1 tsp Worcestershire Sauce

Directions:

  • Preheat oven to 400° F

  • Mix horseradish, sour cream, mayonnaise, lemon juice, Worcestershire sauce in a bowl

  • Season with salt and pepper to taste

  • Refrigerate until bites are ready to serve

  • Season the beef with salt and pepper

  • Put halved bacon slices on a baking pan lined with foil, bake for 7-9 minutes until cooked halfway

  • Once cooled, wrap bacon around filet bites and insert a skewer through the middle to hold the bacon in place

  • Place bites on a foil-lined baking sheet, cook at 400° F for 5 minutes then turn the oven to broil and cook for 2 additional minutes

  • Let rest for 2 minutes then plate and serve
